Almost Time for a Caprese Salad

It is almost that magical tme in NJ: when the tomatoes come in and you have to devise several ways to eat, preserve and otherwise flaunt their abundance.We hope this year will be no exception. Steffany has planted row upon row of the fruit and it looks just a couple of weeks away from our plates.

And what is the tomato without its companion? The basil is already in and looks gorgeous.

The only thing missing here is the mozzarella, some extra virgin olive oil, cracked pepper and a few slices of grilled bread on the side.  While we wait we’ll be making pesto and diving into the swiss chard and summer squash. Love the fresh veggies!
