Happy New Year!
Jon and I had the great pleasure of heading over to Matt’s Red Rooster Grill in Flemington for dinner the other night. As always, it was a culinary treat. Best of all, he had one of our Berkshires on the menu. In addition to the regular fare, he had us sample a bone-in pork belly he created with our pork.
It was like a bacon popsicle – with potatoes cooked in the fat drippings. A heart attack on a plate, really, but with our new year’s resolutions just around the corner, it felt right to live dangerously!
When I tell you that it was simply out of this world, that’s putting it mildly.
